Speltbakers started in our kitchen in Bramblestown in 2010. I'm from Germany and never saw eye to eye with the sliced pan, so I was always baking our own bread. A homeopath turned us onto spelt because of asthma in the family – and we never looked back.

Glasrai and Goodies in Gowran started taking our bread, then The Good Earth in Kilkenny. In 2013 we got a LEADER grant and moved to a renovated shed across the yard with bigger ovens, and we were away!

We're still a tiny bakery with small pastry ovens that make the lights dim when they're both on. These days we work with five amazing part-time bakers and deliver across Kilkenny, Waterford and Carlow.

We're members of Real Bread Ireland and we bake Wednesday to Saturday, except for ten days over Christmas and three weeks in July.

We believe passionately in good food, real bread, and healthy local supplies. Organic spelt flour, proper fermentation, no shortcuts.

We sell at markets, do home deliveries and postal orders, and support independent shops. Basically, we bake good bread and get it to local customers in the most sensible, low-waste way we can.
